My family isn't big on honeydew so I make the salsa with fresh pineapple and also add some crystalized ginger, chopped fine. Also use thicker pork chops and add a little cumin to spice rub.

Amazing flavor combo, healthy and suitable for guests. I served with grilled veggies, but it doesn't need much of a side dish with the Mellon.

This is my go-to recipe for pork chops (especially those thick, America's cut boneless chops). I have served them for company and I get rave reviews every time. As a shortcut I sometimes buy the honeydew and watermelon that my grocery sells already cut. It may be cheaper just to buy the whole melons, but we never eat them all. Plus, it cuts down on the prep work and mess.

Great summer recipe! Left the jalopeno and spices out for our 6 year olds pork chop but added them for the grown ups. Was a hit all around.

I was a little afraid of the salsa recipe (onions, jalepenos & melon?!), but OMG this salsa combined with the pork chops; delicious! I rounded out the meal with brown rice cooked in low sodium chicken broth (as another reviewer did). Next time I'll use a little thicker cut boneless pork chop.

Made this last night for me and my roomate. VERY simple and easy to make. The honeydew i bought was bad, so i used all watermelon. It was delicious. A little heat on the chops, countered well with the watermelon salsa. I might have been a little heave on the jalapenos so the salsa had a kick too - but i like a kick. Definitely recommended. Think it would be better in teh summer as it is very refreshing. But still delicious in the fall.

This meal is pretty good, not sure if I would spend the extra money for the watermelon and honeydew again. The pork chops were tasty. I served it with bread with melted jalapeno-jack cheese.

My family enjoyed this recipe but agreed the salsa was a little bland - so, I added 1 T of honey which perked it up. I served it with grilled salmon and steamed asparagus. Next time I'll try it with the pork chops.

Very easy, tasted wonderful, but I would make extra salsa. My husband and I only made two pork chops but used the entire amount of salsa.

DE-licious! Love the freshness of the fruit salsa, and it tasted so great with the pork! I followed the recipe exactly except I used thick-cut chops so it took a little longer to cook. Served them with mashed potatoes and steamed asparagus.

We pan-roasted the pork instead of grilling it (we got these phenomenal 2-inch-thick center-cut pork chops and wanted to keep them juicy) but otherwise followed the recipe as written. The salsa was amazing, and the flavor of the pork was wonderful. We served it with brown rice--a perfect complement to the meal.

Just weathered a heat wave and this was a good relief. One thing I learned is not to substitute chipotle chile for regular chile powder. Also left the seeds in the jalapeno... Added a tad more heat than we expected, but nothing that more beer couldn't cure.

Prepped the salsa in advance, up to the point of adding juice & salt. Omitted the canola oil, added ¼ tsp cumin and dry-rubbed the chops, then a light spray of oil. Added the lime juice & salt to the fruit just before plating. Served with simply grilled yellow squash & red onion. Very good. (we plan to make more fruit salsa for breakfast)

This was a good summer recipe. I made the salsa ahead of time and then it only took about 10-15 min after work to cook the pork chops on the grill. Will definitely make again.
