This cranberry apple crisp is mostly fruit with just a little bit of sweetness and almond crumble on top. It’s a great option for a festive dessert to show off to friends and family that won’t wreak havoc on your waistline!

It’s super easy to assemble and will have your house smelling like the holidays.

It’s FINALLY starting to feel like fall around here. The temps are dropping, which means two things: I can bust out the furry slippers and I suddenly get in the mood to bake all day. Maybe it’s the fact that Thanksgiving is this coming week, or that the stores seemingly have skipped right over this beloved holiday and moved on to Christmas. Either way, I’ll take it!

This month’s Recipe Redux theme is Trimming the Table. The holiday making season is upon us. Time to pull out all the stops! Show us the healthy holiday dessert you will be sharing with family and friends this season.

Cranberry Apple Crisp simple screams “Holiday Recipe”

Since I already shared my insanely delicious pumpkin pie bites with you, I thought I bust out the apples and cranberries, a fruit duo that screams holiday!

This was perfect timing because I had an apple cranberry crisp on the menu for my December cooking class that I needed to test out, and figured, why not share it here, too? I wish I could share all of the recipes we make in cooking class because they are all so good!

One of my favorite holiday desserts is apple pie, but I’m not really a baker, so a crumble is much more up my alley. It also allows for a lot more fruit with just a little bit of “crust” – just the way I like it!

The sweetness from the apples and the tartness from the cranberries are the perfect complement to each other in this dessert. The hint of orange gives this dish an unexpected twist and in my opinion, cranberry and orange go together like peanut butter and jelly, so you really can’t go wrong.

This apple cranberry crisp would be delicious served with some coconut whipped cream, vanilla ice cream (hey, who am I to judge?), and is even fantastic all on its own!

Description

This cranberry apple crisp is mostly fruit with just a little bit of sweetness and almond crumble on top. It’s a great option for a festive dessert to show off to friends and family that won’t wreak havoc on your waistline!

Ingredients

Units Scale

  • 4 gala apples, cored and chopped
  • 1 cup fresh or frozen cranberries
  • 1/3 cup maple syrup
  • 2 Tablespoons orange juice (about 1/2 orange)
  • 1 Tablespoon arrowroot starch (could sub cornstarch)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Almond crumble:
  • 3/4 cup oats
  • 1/2 cup almond meal (or flour)
  • 1/3 cup coconut sugar
  • 1/4 cup sliced almonds
  • 1/4 cup coconut oil
  • 1 Tablespoon orange zest (1 orange)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine the chopped apples, cranberries, maple syrup, orange juice, arrowroot starch, vanilla extract and cinnamon; stir to combine.
  3. In a small bowl, add the oats, almond meal, coconut sugar, sliced almonds, coconut oil, orange zest, cinnamon and salt. Mash with a fork, or break the coconut oil up with your fingers until the mixture becomes crumbly.
  4. Pour the apple cranberry mixture into a square baking dish and sprinkle the crumble mixture on top. Bake in the oven for 40 minutes, or until bubbly and golden brown. Let cool for a few minutes before serving.
